Very calorific but delicious pudding for a cold winter night!

Recipe Ingredients for Microwave 'Steamed' Sponge pudding

50 grams self raising flour
50 grams sugar
50 grams butter
1/2 teaspoon vanilla essence
1 teaspoon lemon rind
1 medium egg
1 1/2 tablespoons raspberry jam

Recipe Directions for Microwave 'Steamed' Sponge pudding

  1. Grease a one pint pudding bowl

  2. Put the jam/syrup inot the basin

  3. Cream butter and sugar

  4. add egg and vanilla essence and beat

  5. Add flour and mix thoroughly

  6. Stir in lemon rind

  7. turn into bowl

  8. Cover with clingwrap and cook on full power for 5.5 minutes. leave to 'steam' until required
