Easy microwave muffins that are low fat, low sugar, high fiber (for a muffin!). Makes 6+ large muffins. Mine always seem to flatten out, but still taste great. additional requirements: spices (if desired) muffin tin liners

Recipe Ingredients for microwave oatmeal muffins

1/2 c. instant oatmeal
1/2 c. wheat bran
1 T flax seeds
1 egg white
1/2 c. skim milk
1/2 c. whole wheat flour
1/2 mashed banana
1/3 c. apple sauce (unsweetened)
1/4 c. Splenda
1/2 t. baking powder
1/2 t. baking soda
1/8 t salt
1/4 c. cranberries

Recipe Directions for microwave oatmeal muffins

  1. Mix oats, bran, flax, milk, and eggs. Add mashed banana and apple sauce, spices (if desired), Splenda and cranberries.

  2. Mix dry ingredients and add to wet. Combine just until moist and quickly place in muffin liners. Fill only 2/3 full and space evenly on a large plate (they may flatten depending on moisture, liner thickness, ect.) Microwave on high 3-5 minutes, turning 180 degrees part way through if needed. Enjoy warm or crumble cold muffins on low fat yogurt (like museli).

  3. For more dense, wet muffins adding more bran or use soy flour/ multigrain flour.

  4. TO MAKE VEGAN: replace egg with additional applesauce and milk with soy/almond/rice milk.
