Quick mochi with bean paste filling.

Recipe Ingredients for Microwave Mochi

1 cup Mochiko Sweet Rice Flour
2/3 cup water
1/4 cup sugar
1 oz potato starch
2 tablespoons sweetened red bean paste

Recipe Directions for Microwave Mochi

  1. Separate bean paste into 12 pieces

  2. Mix water and sugar until sugar is dissolved. Add mochiko and stir well.

  3. Microwave for 2 minutes.

  4. Stir.

  5. Microwave until dough inflates (30-90 seconds).

  6. Remove dough from bowl onto surface powdered with potato starch. Cover hands in potato starch. While dough is still hot, divide into 12 pieces, stretching and wrapping each piece around a piece of bean paste. Pinch closed to seal each piece.

  7. CAUTION: dough is hot-it is very likely you will get burned during this process. Handle dough quickly and always with plenty of potato starch to prevent burning.
