Delicious! I made this with fresh ground whole wheat flour and home made kefir.

Recipe Ingredients for Microwave Bran Muffins

174 grams Wheat Bran, Crude
1/4 cup Butter
296 3/10 grams Water
2 large Egg, White
2 tsp Baking Soda
2 cup LowFat Plain Kefir
1/2 cup Sugars, Granulated
2 1/2 cup Whole Wheat Flour

Recipe Directions for Microwave Bran Muffins

  1. Mix boiling water and bran until bran is moistened. That's 1 1/4 cups of water and 3 cups of bran. I don't know why calorie count lists water in grams!

  2. Add butter, stir it in, and wait for butter to soften.

  3. Stir in sugar and eggs.

  4. Add remaining ingredients and stir.

  5. Stores in refrigerator 6 weeks.

  6. 1/4 cup of batter in a microwave muffin pan makes one serving, cupcake sized. Larger containers may be used with more batter. Bigger muffin: use a cereal bowl, with a coffee filter for a muffin paper.

  7. Microwave until tops of muffins are almost dry.

  8. Variations: Use sour milk or buttermilk instead of kefir. Use any bran cereal instead of wheat bran. Use oil instead of butter. Vary the amount of sugar for your tastes, or if the bran cereal is already sweetened. Add dates, raisins, or other goodies.
