Family favourite! The kids love them, the Hubby loves them, I love them, my jeans love them ;)! Tuna also works fine for this dish. Good way to use up leftover mashed potatoes, too (I never have any leftovers, but others might).

Recipe Ingredients for Michelle's Salmon Cakes

240 g canned salmon (2 cans)
1 large potato
1 egg
1/2 small onion
1/2 tsp salt
2 tbsp chopped parsley
1/4 cup flour
1 tbsp Olive oil for frying

Recipe Directions for Michelle's Salmon Cakes

  1. Peel and chop potato. Boil until soft, then mash well.

  2. Drain fish, put in medium mixing bowl. Add egg, mix well.

  3. Chop onion very finely. Chop parsley. Add to fish mixture.

  4. Add salt and flour. Stir until just mixed.

  5. Add mashed potatoes and mix.

  6. Dust cutting board with flour. Scoop mixture using a large spoon, make into patties on cutting board. Add more flour as needed.

  7. Transfer to hot griddle/frying pan using lifter. Do not lift by hand as they will fall apart. Fry for about 3-4 minutes per side. Serve with vegetables.
