Recipe Ingredients for Michelle's Mexican Salad

1 tomato, diced into medium pieces
1 orange bell pepper, diced into medium pieces
1/4 head of iceberg lettuce, torn into bite size pieces
1/4 cup cilantro, chopped
15 1/2 ounce black beans
1 1/2 cups yellow corn, frozen
1 avocado, sliced
3/4 cup shredded cheese, mexican style
8 tbsp lime juice, fresh squeezed aprox 2 limes
1/4 tsp black pepper

Recipe Directions for Michelle's Mexican Salad

  1. Get a big mixing bowl.

  2. Put tomato, bell pepper, lettuce, and cilantro into mixing bowl.

  3. Rinse and drain beans well, heat in microwave approx 1 min. Put into mixing bowl.

  4. Heat corn in microwave according to package directions - drain well. Put into mixing bowl.

  5. Mix everything in mixing bowl and generously portion into 4 bowls.

  6. Add 1/4 of avocado slices to each, 1/4 of shredded cheese.

  7. Combine black pepper and lime juice. Portion 2 tbsp to each bowl mix well.

  8. Suggestion: For best results use equal amounts tomato, bell pepper, and lettuce, but add or subtract ingredients to suit taste. If saving for next day's lunch: do not add cheese, avocado, or lime juice until just before eating. Saves well for 2 days.
