Recipe Ingredients for Michelle's Mediterranean Chicken

3 3/5 pounds chicken thigh
2 tbsp extra virgin olive oil
2 medium onions, diced
2 green bell peppers, diced
4 cloves garlic, minced
29 ounces stewed tomatoes, undrained
2 1/4 ounce black olives, drained
4 tbsp Red Wine or Sherry Cooking Wine
2 tsp oregano

Recipe Directions for Michelle's Mediterranean Chicken

  1. In an extra large saucepan sautee the onions, peppers, and garlic in the EVOO.

  2. Add the chicken, brown (or cook each side),turning once.

  3. Add the stewed tomatoes, oregano, sherry, and black olives.

  4. Turn heat down to medium, cover and simmer until chicken is cooked through.
