A fabulous chicken salad with grapes and little pickle to add some kick. Serve with crackers, on low-carb or whole grain bread, or wrapped in a low-carb tortilla.

Recipe Ingredients for Michael's Chicken Salad

1 1/2 lb chicken breast
1 cup light mayonnaise
1 cup celery, diced
1/2 cup onion, diced
1/2 cup dill pickles, diced
1 1/2 cups grapes, halved

Recipe Directions for Michael's Chicken Salad

  1. Shred a whole rotissiere chicken, pre-cooked.

  2. Combine cooked chicken with all other ingredients and salt and pepper to taste, if desired.

  3. Serve with crackers, whole grain bread, or wraps. Add some lettuce leaves and/or sliced tomato to sandwich, if desired.
