Recipe Ingredients for Mia's Beef Stew

1/2 onion
2 stalks celery
2 1/2 tsp. minced garlic
1 c. vegetable broth
4 carrots
2 yellow squash
2 potatos
1 lb. beef stew meat
3 tbsp. basil
1 tbsp. thyme
2 tsp. rosemary
2 tbsp. garlic powder
1 tsp. salt
1 tbsp. pepper
1/2 tsp. tarragon
1/2 tsp. anise seed

Recipe Directions for Mia's Beef Stew

  1. Finely chop celery and onion. Add minced garlic. Sautee over low heat 15 minutes.

  2. Meanwhile, chop carrots, potato, and squash into bite size pieces. Combine with beef and vegetable broth in Crock Pot.

  3. Stir in celery mixture and seasonings. Mix well in crock pot. Allow to cook 3-5 hours depending on heat setting, stirring occasionally.

  4. Serve with rice, bread, or on its own.
