Recipe Ingredients for mgts chicken casserole

500 g chicken,skin removed, halved
2 oz celery,chopped
3 carrots, chopped,
1 onion, chopped,
1 g sunflower oil
2 oz button mushrooms,
1 g fennel, seeds
1/2 pint chicken stock, fat reduced
1 oz cheese
2 cloves of garlic ,crushed (optional)
1 Black pepper ,to season

Recipe Directions for mgts chicken casserole

  1. Add the sunflower oil to the pan. Chop the onion, carrots and celery add the garlic and fry gently in the sunflower oil.Gently saute the veg until it softens.Add the chicken and brown gently on both sides.Next add the mushrooms and the fennel seeds.

  2. Add the stock and allow the casserole to come to the boil.When boil reached turn down the heat and allow to simmer for 30 minutes.When chicken cooked and veg soft add the grated cheese to thicken.
