Fried Eggs over a healthy mexican chilli

Recipe Ingredients for Mexy Breakfast

4 omega-3 eggs
12 oz black beans
8 oz diced tomatoes (no salt added)
3 oz fat-free cream cheese
8 oz soy crumbles
2 tortillas

Recipe Directions for Mexy Breakfast

  1. Bake the tortillas at 350F until crispy, set aside

  2. Combine soy crumbles, tomatos and beans over medium-high heat until hot throughout (smash the beans into a refried-bean paste if desired)

  3. Season with chipolte pepper, garlic powder, onion powder (any spices you wish, not included in count but basically negligible)

  4. Serve 2 fried eggs (each) over half the bean mixture

  5. Top with crumbled tortillas
