A twist on corn casserole. Can lower cal content with margarine instead of butter. I use butter because of sodium.

Recipe Ingredients for Mexicorn Casserole

5 oz Mahatma Saffron Yellow Rice
11 oz Mexicorn
1 can (10.75 oz) Soup, Cream Of Chicken
1 stick Butter
8 oz Pepper Jack

Recipe Directions for Mexicorn Casserole

  1. Cook rice according to package.

  2. Combine rice, cheese, corn, soup and butter in 8x8 pan.

  3. Bake at 350 for 30 minutes.
