Recipe Ingredients for MexiChicken'n Brown Rice

2 cups chicken, dark meat,diced
1/2 cup brown rice
1/2 cup chicken broth, low sodium
1 cup onion, sliced
2 medium potatoes, cubed
8 baby carrots, cut into thirds
1/4 cup celery, diced
1 clove garlic, chopped
1 cup water
10 oz can tomatoes, diced
1/4 tsp salt
1/4 tsp pepper
1 tbsp chili powder
1 tbsp cumin

Recipe Directions for MexiChicken'n Brown Rice

  1. Use slow cooker

  2. Place potatoes, onions, carrots & celery in bottom of cooker.

  3. Then add canned tomatoes, broth and water.

  4. Add rice and chicken, stir to mix.

  5. Add seasonings last in any order.

  6. Cook on high for short while, then reduce to low for at least 4 hours, serve hot.
