Originally designed as a burrito filler, ended up as a stew, added some rice, and came around (finally) as a burrito filler. Yum!

Recipe Ingredients for MexiChicken

3 cups chicken breasts, sliced
2 cloves garlic, chopped
2 tbsp cilantro, chopped
14 1/2 oz diced tomatoes
15 1/4 oz black beans
11 oz corn
4 oz diced jalapenos
1 medium onion, diced
2 chicken boullion cubes
1/4 cup rice

Recipe Directions for MexiChicken

  1. Clean and slice the chicken into manageable pieces and put in the pan.

  2. Open all the cans and dump into the pan. Green Giant Mexicorn is suggested because it also has green & red peppers added (optional)

  3. Crush and mince the garlic and add to the pan.

  4. Finely chop the cilantro and add to the mix (keep some whole on the side for garnish).

  5. Dice the onion and add.

  6. Add in the rice and boullion

  7. Mix well, cover, and put over medium heat until bubbly, then simmer until the chicken is fully cooked.

  8. If needed, remove the chicken, shred, and replace.
