It's a staple of North African cooking and can be used in recipes or served as a side dish in place of rice. You'll find it in the rice or pasta section of the supermarket or at spacialty food stores.)

Recipe Ingredients for Mexicana Couscous

3/4 cup chopped onion
1 teaspoon minced garlic
1 tablespoon cooking oil
1/2 teaspoon ground cumin
1 cup chicken broth, reduced sodium
3/4 cup peas, frozen, loose-pack
3/4 cup tomato, coarsely chopped
2 tablespoons cilantro, fresh
3/4 cup couscous, quick-cooking

Recipe Directions for Mexicana Couscous

  1. In a medium saucepan cook and stir onion and garlic in hot oil over medium heat until tender. Stir in cumin; cook for 30 seconds.

  2. Carefully add the broth, peas, tomato, and snipped, fresh, or dried cilantro. Bring mixture to boiling. Stir in couscous; remove from heat. Cover and let stand for 5 minutes. Fluff with a fork. If desired, garnish with cilantro sprigs.
