Recipe Ingredients for Mexican Zucchini Lasagna

6 medium Squash, Summer, Zucchini, Includes Skin
1.75 cup Organic Pinto Beans
1.75 cup Black Beans Drained and Rinsed
1.75 cup Refried Black Beans
1.75 cup Diced Tomatoes
4.5 oz Green Chiles
16 oz Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
6 serving Sharp Cheddar
4 oz Pepper Jack Chunk Cheese
2 small Onions

Recipe Directions for Mexican Zucchini Lasagna

Thinly slice zucchini, sprinkle with salt and layer with paper towels in colander. Allow water to drain from "noodles" while you prep the rest of the recipe. Brown hamburger in pan and add beans, tomatoes, onion, garlic and chilies, along with cumin, paprika, and chili powder to taste. Wipe excess water & salt from zucchini and alternate layers of zucchini and hamburger/bean filling. Top with enchilada sauce and cheese and bake in oven for 25 minutes covered, and 10-15 minutes uncovered to brown top.
