Recipe Ingredients for Mexican Yes I Can from Food & Whine

1 tbsp olive oil
1 onion, diced
1 green pepper, diced
1 clove garlic, crushed
19 oz black beans, drained and rinsed
28 oz diced tomatoes
1 cup frozen or canned corn
2 tsp chili powder
1 tsp cumin
1 cup cornmeal
1 cup flour
1 tbsp brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk or soured milk
1 egg
3 tbsp vegetable oil
1 tbsp parmesan cheese

Recipe Directions for Mexican Yes I Can from Food & Whine

  1. Cook the first few ingredients (up to the cornmeal) in a pot for 20 minutes.

  2. Mix the dry ingredients together for the cornbread

  3. Beat together the milk, egg and oil and combine with the dry ingredients.

  4. Pour the stew into a baking dish.

  5. Top with the cornbread mixture and sprinkle cheese over it.

  6. Bake at 350 until the cornbread is cooked through and golden brown.
