Known to be served at the end of Spanish weddings because of the belief that rich sugary foods shold be served last after the wedding meal. Spanish wedding cookies originated with the Medieval Arab culture and from there spread to the Europeans and on to Spanish cultures. Spanish Wedding cookies first appeared in The United States in the 1950s They have also grown to be known as Christams cookies due to their "snowball" appearance.

Recipe Ingredients for Mexican Wedding Cookie Recipe

1/2 cup butter
1/2 cup shortening
1 cup powdered sugar for rolling cookies
1 1/4 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup pecans

Recipe Directions for Mexican Wedding Cookie Recipe

  1. Preheat oven to 325 degrees F.

  2. In a large bowl, using an electric mixer, cream together butter, shortening, and 1 cup of powdered sugar.

  3. Gradually add 1 cup of flour and salt, combining with mixer.

  4. Add remaining 1 cup of flour and pecans, stirring with spoon. Dough will be stiff.

  5. Form dough into tablespoon size balls and place on cookie sheet 1 inch apart.

  6. Bake 15-20 minutes, or until cookies are lightly golden brown.

  7. In small bowl, add 1 cup of powdered sugar. While cookies are still warm, roll each one coating completely
