These are my mom's favorite Christmas cookies. They look like little snowballs!

Recipe Ingredients for Mexican Wedding Cakes

1 cup butter, softened
3/4 cup confectioners' sugar, divided
2 cups all-purpose flour
2 cups pecans, finely ground
1 teaspoon vanilla extract

Recipe Directions for Mexican Wedding Cakes

  1. Cream together butter and sugar.

  2. Beat in vanilla extract.

  3. Gradually beat in flour and ground pecans. Mix thoroughly.

  4. Refrigerate dough for at least 1 hour.

  5. Preheat oven to 375 degrees F.

  6. Roll dough into 1-inch balls and arrange on cookie sheet.

  7. Bake for about 12 minutes, or until tops are lightly browned and beginning to crack.

  8. Roll baked cookies in powdered sugar, allow to cool, and roll again to coat.
