Just something I threw together...

Recipe Ingredients for Mexican Venison

1 1/2 pounds venison
1 (15oz) tomatoes, diced
1 (15oz) enchilada sauce
1/2 medium onion, chopped
1 leek, sliced
1 cup mushrooms, sliced
1 cup bok choy, chopped 1" pieces

Recipe Directions for Mexican Venison

  1. Place diced tomatoes, enchilada sauce & about 1 cup of H2O into slow cooker with venison roast.

  2. Cook on high while at work :)

  3. Spray nonstick pan w/ Pam & saute vegetables.

  4. Add to meat mixture when tender/crisp
