Vegetables with cheese sprinkled on top. Came out really tasty and filling! It was nice to try some new things, we had never had chayote squash or jicama before.

Recipe Ingredients for Mexican Veggies with Cheese

1 cup slices Yambean (Jicama)
1 chayote (5-3/4") Chayote, Fruit
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 large Squash, Summer, All Varieties
1 cup Diced Tomatoes, No Salt Added
2 oz Onion Red
2 clove Garlic
2 slice (1 oz) Mexican, Queso Asadero Cheese
