Recipe Ingredients for Mexican Veggie Cassarole

2 cups of brown rice, cooked
2 cups of chedder cheese
15 ounce of whole kernel corn
15 ounce of fat-free refried beans
15 ounce of tomatoes with green chili
8 ounce of salsa
8 ounce of sour cream

Recipe Directions for Mexican Veggie Cassarole

  1. Preheat oven to 350 degrees

  2. Mix rice, cheese, corn, refried beans, tomatoes, salsa, and sour cream together in a bowl.

  3. Lightly grease a 9x13 baking dish, and spoon in mixed ingredients.

  4. Top with cheese, and green onions

  5. Bake for 50-60 min.
