1/4 cup black beans
1 1/2 pints grape tomatoes
1 cup corn
1 large cucumber
1 T fresh cilantro
4 T fresh lime juice
3/4 T olive oil

Recipe Directions for Mexican Vegetable Salad

Chop ingredients into bite size pieces. Mix with lime juice, cilantro, oil, and garlic salt. Serve on a bed of fresh greens with grilled chicken breast
