Mexican Tortilla Lasagna Recipe

ground beef, cheese, baked, adapted from Susan Nichols 7-day meal planner. You can used lean ground beef and 50% reduced fat cheese if you like. Also a fresh poblano pepper chopped & seeded instead of canned.

Recipe Ingredients for MEXICAN TORTILLA LASAGNA

1 pound ground beef,
4 oz chili peppers, can, chopped
3 tablespoons chili powder
14 1/2 oz tomatoes, canned
11 ounce Mexicorn, can rinsed
5 ounces enchilada sauce, mild or medium
1 cup cilantro, chopped fresh
184 grams Tortillas, Ready-to-bake (4, 8-inch)
4 ounces cheddar cheese, shredded

Recipe Directions for MEXICAN TORTILLA LASAGNA

  1. Heat oven to 400 degrees. Coat an 8-by-8-inch baking dish with cooking spray.

  2. In a large nonstick skillet on medium, cook beef and pepper 8 minutes or until beef is no longer pink and pepper is softened. Stir in chili powder; cook 1 minute. Stir in tomatoes, corn and enchilada sauce. Bring to simmer. Remove from heat; stir in cilantro.

  3. To assemble: Place 1 tortilla on bottom of dish (tortilla may come up sides of dish). Top with a rounded cup of beef mixture, then 1/4 of the cheese. Repeat layers 3 times. Cover with nonstick foil.

  4. Bake 25 minutes; uncover and bake 10 minutes. Remove from oven; let stand 5 minutes before serving.
