Recipe Ingredients for mexican tilapia soup

2 tablespoons olive oil
1 onions, chopped
1 chopped celery stalks
2 cloves garlic, crushed
1 red pepper, seeded and diced
1/2 teaspoon powdered cumin
1 teaspoon cinnamon
1/2 teaspoon coriander seeds
4 cups low sodium chicken broth
3 tablespoons lemon juice
24 oz tilapia
4 ripe diced tomatoes (or 1 small can tomatoes)
1/2 cup dill, parsley and fresh cilantro, chopped
1 salt and pepper

Recipe Directions for mexican tilapia soup

  1. Heat the oil in a large pot. Add the onion and the celery and cook over low heat; add the garlic and the red pepper when the onion and celery are tender.

  2. Add the cumin, cinnamon and the coriander seeds and stir for one minute.

  3. Add the broth and the lemon juice. Simmer without cover for 20 minutes; the potatoes should be tender.

  4. Add the fish/seafood, tomatoes, herbs, salt and pepper. Cook until the fish is tender.
