Twice baked potatoes are always delicious - and healthy with added vegetables, which bring extra color, flavor, and nutrients to the party!

Recipe Ingredients for Mexican-Style Twice Baked Potatoes

2 russet potatoes
1/2 cup light sour cream
1 bell pepper, chopped finely
1 small onion, chopped finely
1 jalapeno pepper, minced
3/4 cup shredded Tex Mex cheese
1 tsp garlic powder
1/2 tsp dried dill
1 tsp black pepper

Recipe Directions for Mexican-Style Twice Baked Potatoes

  1. Preheat oven to 350 degrees.

  2. Pierce potatoes and microwave for 10 minutes on High. Allow potatoes to cool until they can be handled.

  3. Slice potatoes in half lengthwise.

  4. Scoop potato flesh into a large mixing bowl, leaving skins intact.

  5. Mix potato flesh with sour cream, pepper, onion, jalapeno, 1/2 cup of the cheese, and seasonings.

  6. Spoon potato filling back into potato skins. If you have extra, bake it in a dish alongside the potatoes (hence the 5 servings).

  7. Top potatoes with remaining 1/4 cup of shredded cheese, and place in oven.

  8. Bake until cheese is melted and lightly browned.

  9. Top with a sprinkle of chives, and they're ready to eat!
