Recipe Ingredients for Mexican Style Shepherds Pie

1 tsp Organics Cooking Spray Olive Oil
120 g onion, finely chopped
2 cloves (6g) garlic, crushed
280 g carrots, diced
250 g zucchini, diced
30 g celery stick, diced
100 g Beef
400 g (14 oz) can tomatoes
1 teaspoon (2g) ground cumin
1 g chilli powder
2 tablespoons (4g) chopped fresh coriander
500 g sweet potato (kumera), peeled, chopped
4 tablespoons (60 g/ 2oz) grated parmesan cheese

Recipe Directions for Mexican Style Shepherds Pie

  1. Lightly spray a large frying pan with olive oil and heat over medium heat. Add the onion and garlic and cook, stirring often, for 3 minutes or until soft. Add the carrot, zucchini and celery and cook, covered, for another 5 minutes, stirring occasionally.

  2. Increase the heat to high. Add the mince and cook, stirring to break up any lumps, for 1-2 minutes or until it changes colour. Stir in the tomato, cumin, chilli and 185 ml (3/4 cup) water. Bring to the boil. Reduce the heat to medium-low. Cover and simmer, stirring occasionally, for 25 minutes. Remove from the heat. Stir in the coriander.

  3. Meanwhile, preheat oven to 180C (356 F). Place the sweet potato in a steamer set over a saucepan of simmering water. Cover and cook for 10 minutes or until tender. Coarsely mash. Add the parmesan and stir to combine.

  4. Spread the meat mixture over the base of a 1 litre (4 cup) capacity ovenproof dish or four 250 ml (1 cup) capacity oven proof dishes. Spread the sweet potato over the meat mixture. Bake for 30-40 minutes or until golden.
