Crisp, fresh and delicious salad.

Recipe Ingredients for Mexican Style Salad

32 oz of black beans, drained and rinsed
1 1/2 cups corn kernels (fresh or frozen)
1 large red bell pepper, seeded and diced
1 cup jicama, peeled and diced
2 jalapeno peppers, small, seeded and minced
1/2 c. cilantro, firmly packed and chopped
1/4 c. lime juice, fresh (2 limes)
2 tbs. olive oil
1 1/2 tsp. salt
1 tsp. pepper
1/2 tsp. cumin

Recipe Directions for Mexican Style Salad

In a large bowl combine all of the ingredients and mix well. Cover and refrigerate for at least 1 hour or overnight. Serve cold or at room temperature.
