Mexican Style Rice Recipe

Makes 8 servings



150 grams equals 1 cup of this recipe as is, lightly spooned in, not packed. It would be better with the addition of green peppers, more onion, and any other "suitable" vegetables. Serve with Turkey Kielbasa, reserved sauce, and sour cream, if desired.

Recipe Ingredients for Mexican Style Rice

1/2 onion
1 tbsp oil
1 cup rice
1 cup salsa
302 grams tomatoes with green chiles
1 1/2 cups water

Recipe Directions for Mexican Style Rice

  1. Heat oil over medium high heat.

  2. Saute .5 onion, diced, until clear.

  3. While onion is being sauteed, prepare salsa mixture by combining salsa, tomatoes, and water. Mix thoroughly.

  4. Remove onion and set aside.

  5. Saute rice in remaining oil until opaque.

  6. Add salsa mixture, reserving .5 cups. Stir briefly but thoroughly.

  7. Bring to a boil, place onion on top, cover and reduce heat to low.

  8. Simmer for 15 minutes or until rice is done, adding more liquid if necessary. Do not remove lid until 14/15 min, test rice at that time. For each 1/4 cup water added, cook about 3-5 min longer. Rice should be firm but not hard.

  9. Remove from heat, mix gently, and serve. See serving suggestion in description.
