Recipe Ingredients for Mexican Style Quinoa

1 tablespoon corn oil
1/2 cup onion, diced
1 clove garlic, chopped
1 teaspoon cumin
1 teaspoon chili powder
1 cup quinoa
1 1/2 cups chicken broth
1/2 cup diced tomato
1/2 teaspoon oregano
1/4 cup cilantro

Recipe Directions for Mexican Style Quinoa

  1. Heat the oil in a pan over medium heat.

  2. Add the onions and saute until tender, about 5-7 minutes.

  3. Add the garlic, cumin and chili powder and saute until fragrant about a minute.

  4. Add the quinoa, broth, tomato, oregano, salt and pepper and bring to a boil.

  5. Reduce the heat, cover, and simmer until the the quinoa is tender and liquid has been absorbed, about 15 minutes.

  6. Remove from heat and let sit for 5 minutes.

  7. Serve garnished with cilantro.
