Like a black bean burger, but baked into a loaf!

Recipe Ingredients for Mexican-Style Meatloaf

1 lb 95% lean ground beef
15 oz low sodium canned black beans
1 cup bell pepper, finely chopped
1/4 cup jalapeno, minced
1 red onion, finely chopped
1 tsp garlic
1 tsp black pepper
1 tsp thyme
2 tbsp BBQ sauce
2 tbsp Worcestershire sauce
2 tbsp grated Parmesan cheese
1 egg

Recipe Directions for Mexican-Style Meatloaf

  1. Preheat oven to 400 degrees F.

  2. Combine all ingredients in a large mixing bowl. Works best if you use your hands to mix.

  3. Spray a loaf pan or 9x9" baking dish with nonstick cooking spray.

  4. Spread the beef mixture into the prepared pan or dish.

  5. Bake meatloaf for 35 to 40 minutes, or until the top is nicely browned and the juices are bubbling.

  6. Top with a squirt of BBQ sauce, or one of your other favorite condiments. Goes great with a baked potato - yum!
