Ground pork and Mexican seasoning in the slow cookers.

Recipe Ingredients for Mexican style casserola

1 pound ground pork
3/4 cup corn meal
1 egg
1 cup frozen corn kernels
10 3/4 ounces tomatoes with green chilies (1 can)
1 1/2 cups milk
4 ounces grated fat free cheddar cheese
3/4 ounce taco seasoning (1 package)

Recipe Directions for Mexican style casserola

  1. Spray interior of slow cooker with non-stick vegetable spray. In medium skillet over medium heat, crumble and cook ground pork until brown. Place in slow cooker.

  2. In small bowl, combine cornmeal, milk and egg. Stir into sausage. Add tomatoes, corn and seasoning mix. Stir well. Cover and cook on low 4 to 6 hours. Top with cheese 5 minutes before serving. Recover to melt cheese.
