Mexican Stir Fry/Black Beans and Rice

Recipe Ingredients for Mexican Stir Fry/Black Beans and Rice

15 oz S&W Black beans 50% less sodium
1/2 cup Uncle Ben's Original Converted Rice
1 tbsp Extra Virgin Olive Oil
2 tbsp Lime Juice
2 oz sharp cheddar cheese
1 tsp sliced jalepeņo pepper
1 tbsp chopped onion
1 tsp chopped garlic
1/2 tsp Season All Seasoned Salt

Recipe Directions for Mexican Stir Fry/Black Beans and Rice

  1. Cook the rice first according to box instructions (I forgo the butter, myself)

  2. Heat the olive oil on the stove, then simmer the onions and garlic

  3. Add beans, jalepeņo and lime juice

  4. Add rice and seasoned salt.

  5. Let simmer
