Big portions (about 2 cups!) for under 300 calories! You can serve over rice or barley, wrap in a tortilla or eat it plain. You can top with shredded cheese and sour cream. Be sure if you use these extras that you count them separately!

Recipe Ingredients for Mexican stir fry beef

1 lb beef sirloin, cut into strips
1 red bell pepper, cut into strips
1 1/2 medium sweet onion, cut into strips (keep the whole and half separate)
42 3/5 grams of Mccormick 30% less sodium taco seasoning (one package)
8 mushrooms, cut into strips
2 medium tomato, diced
1 1/2 avocado, diced (keep the whole and half separate)
1 cup canned black beans, rinsed and drained
4 cups shredded lettuce
6 cloves garlic, minced
1 salt to taste

Recipe Directions for Mexican stir fry beef

  1. Preheat your pan to a medium high heat.

  2. Add the beef strips first, then the whole onion (save the other half of one), the bell pepper and half the garlic. Add a bit of water or vegetable broth to help it cook. Let cook a few minutes.

  3. While those are cooking, dice the half of onion. Add that, the half of a avocado, the other half of the garlic and half the tomatoes in a bowl. Salt to taste. Mix together, cover and chill. You may also add some fresh cilantro and some lemon juice. This is a simple pico de gallo (an uncooked salsa), though it usually doesn't have avocado.

  4. Now the the veggies in the pan should be about half cooked. Add the whole avocado, the whole onion, the black beans, the mushrooms and the other half of the tomato. Add the taco seasoning and some more water to help it cook, about half a cup or so. Let cook until the onions are tender.

  5. Serve with 1/2 cup shredded lettuce and equal portions of the pico de gallo on top.
