Super hearty - great over cous cous

Recipe Ingredients for Mexican Stew

1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 ears corn
2 cup,+cubes sweet potatoes
3 small tomatoes, seeded and diced
15 oz canned black beans, drained and rinsed
15 oz tomato sauce
1/4 cup vegetable broth
2 tsp cayenne pepper, chipotle kind
2 tsp dried oregano
1 1/2 tsp ground cumin
1 tsp Spices Ground Coriander
1 tsp kosher salt
1/2 tsp ground black pepper
2 tsp oregano, fresh chopped

Recipe Directions for Mexican Stew

  1. Preheat oven to 350. Roast corn for 30 minutes, remove until cool enough to handle. When cool, cut kernels off cob and set aside.

  2. In a large skillet, heat EVOO over medium heat. Add onion and garlic with a sprinkle of salt, cook for about 4 minutes or until soft and translucent. Add diced sweet potatoes, half the tomato sauce and the vegetable broth. Add all the spices, stir well to combine and cover.

  3. Reduce heat to medium low and cook, covered, for 5 minutes. Add (RINSED) black beans and corn kernels and remaining tomato sauce, cover and continue cooking another 5 minutes or until hot throughout.

  4. Serve over grains - quinoa works well - with a dollop of sour cream or sprinkle of shredded cheese if desired.
