Easy to make stew that you can dip!

Recipe Ingredients for Mexican Stew

10 ounce enchilada sauce
14 1/2 ounce chicken broth
14 1/2 ounce stewed tomatoes
16 ounce frozen vegetables
1 cup brown rice
2 cups frozen corn
15 ounce black beans

Recipe Directions for Mexican Stew

  1. Combine all ingredients in large boiling pot.

  2. Bring to a boil, reduce and simmer for 1 hour or until rice is cooked and stew is thickened.

  3. Makes 1/2 cup per serving that you can dip with tortilla chips or roll in corn tortillas.
