Recipe Ingredients for Mexican squash Dinner

10 cups summer squash
13 ounces green chiles, chopped
4 scallions
1 sweet onion
1/2 cup minced garlic
15 oz. diced tomatoes
1 Taco seasoning
2 lbs. hamburger
4 c. cheddar cheese
2 roma tomatoes
1/4 c extra virgin olive oil

Recipe Directions for Mexican squash Dinner

  1. brown hamburger with onion and green chiles and add taco seasoning

  2. peel and slice squash

  3. chop tomatoes and scallions

  4. Mix veggies in a casserol dish

  5. add olive oil and garlic, mix well

  6. portion between two baking pans and add browned hamburger and mix well

  7. Bake in a preheated 400 degree oven for 35-35 minutes
