Recipe Ingredients for Mexican Spinach Bake

700 g spinach
1/2 cup green capsicum
1 onion, finely chopped
3/4 cup celery, finely chopped
1 tsp olive oil
1/2 tsp ground cinnamon
50 ml tomato juice
25 g raisins
50 g cheddar cheese, grated

Recipe Directions for Mexican Spinach Bake

  1. Preheat the oven to 190C or 375F.

  2. Wash and drain spinach. Cook in a large pot with a little water for about 5 mins or until wilted. Remove and fry the onion and celery in the olive oil with the cinnamon, a pinch of cayenne pepper and a pinch of dill or fennel seeds. Add the tomato juice.

  3. Place half the spinach in the base of a large ovenproof dish. Add a layer of peppers, using half of them, a layer of all the onion and celery mix, and sprinkle with the raisins and half the cheese. Top with the remaining peppers, then the spinach, then the last of the cheese.

  4. Bake for about 30-45 mins or until crispy and yum!
