Recipe Ingredients for Mexican Spaghetti Bake

796 ml Canned Diced Tomatoes
1/2 onion
1/2 cup cilantro
2 tbl lime juice
2 cups butternut squash
398 ml Dark Red Kidney Beans
1 1/4 cups cottage cheese 2%
2 cups water
175 g whole wheat spaghetti

Recipe Directions for Mexican Spaghetti Bake

  1. Puree the tomatoes, onion, cilantro, squash and lime.

  2. Pour mixture into casserole dish and add water and dry spaghetti.

  3. Layer on the Kidney Beans.

  4. Top with Cottage Cheese.

  5. Bake at 350 for an hour and a half.
