Recipe Ingredients for Mexican Soup

15 oz Black Beans
2 1tsp Olive Oil
1 small Onions
12 oz Sweetpotato
29 oz Organic Low Sodium Chicken Broth
11 oz Plain Niblets Corn

Recipe Directions for Mexican Soup

  1. Heat oil and saute onion.

  2. Add chopped peeled sweet potato, chicken broth and cumin; cover and reduce heat.

  3. Simmer 15 min, then stir in corn, salsa, tomato sauce and black beans.

  4. Simmer 5 more min to blend flavors.

  5. Serve with sour cream.
