Flavourful soup perfect for dinner.

Recipe Ingredients for Mexican soup

750 ml tomato juice
2 cups water
425 g kidney beans
1 onion
2 garlic cloves
1 tsp oil
1 tsp cumin
1 tbsp chili sauce
1 tsp salt
1 tsp pepper
4 tbsp sour cream
25 g tortilla chips

Recipe Directions for Mexican soup

  1. Heat the oil in a pan and fry gently the onion, garlic and spices for 10 min.

  2. Add the kidney beans, tomato juice, water and chili sauce. Bring to the boil, cover and simmer gently for 30 minutes.

  3. Puree the soup with a hand mixer or in a food processor.

  4. Serve with crushed tortilla chips and sour cream.
