Mexican Soup Recipe

Vegetarian soup. One can use splenda in place of sugar in this recipe. And to reduce fat content, remove the oil and use water to saute instead.

Recipe Ingredients for Mexican Soup


Soup base:
1/2 tbsp oil
1/2 large onion, chopped
1 clove garlic, crushed
1/2 medium green bell pepper, chopped
400 g can tomatoes, chopped
1/4 tsp coriander
1/2 tsp cumin
1/2 tsp basil
1 tsp sugar
1/2 tsp salt

VEGETABLES:
1/2 medium onion, finely chopped
1 1/2 tbsp black olives, sliced
3/4 cup tomatoes, chopped
1/3 cup red kidney beans, cooked
1/2 tbsp chives
1/2 cup water
1/4 cup light sour cream
1/8 cup scallions, chopped

Recipe Directions for Mexican Soup

  1. Heat oil, saute onion, garlic & bell pepper until tender.

  2. Add tomatoes, coriander, cumin, basil, sugar & salt. Cover & simmer until veges are soft. Remove from heat and cool slightly.

  3. Put into blender or processor and process until smooth. Return to saucepan.

  4. Add onions and olives and cook for 5 minutes. Add tomatoes, beans, chives, water & yoghurt. Cook a further 8 minutes.

  5. Stir in spring onions and serve with crusty wholemeal rolls or corn chips.
