Recipe Ingredients for Mexican Sombrero Crepe

2 whole eggs
2 egg yolks
4 fl. oz water
6 fl. oz milk
1/3 tsp salt
4 3/5 oz flour
1 3/5 oz unsalted butter, melted
3 oz cooked shrimp
4 oz canned corn
2 tbsp chopped cilantro
3 oz black beans

Recipe Directions for Mexican Sombrero Crepe

  1. 1. Take 1/3 of the master crepe recipe and add the following ingredients; 4 oz canned corn, 2 tbsp chopped cilantro, salt, pepper, and chili powder. Mix.

  2. 2. Heat the sauté pan; brush lightly with margarine pour 1-1/2 fl. Oz of batter, swirl to coat evenly.

  3. 3. Cook crepe until set lightly brown approx. Flip over and cook for a few seconds longer. Remove from pan. Repeat step.

  4. 4. Cook rice according to directions on box.

  5. 5. Heat black beans and corn, in separate sauté pan.

  6. 6. Grill shrimp skewers.

  7. 7. Assemble Sombrero crepe by placing hot black beans on plate, put scoop of rice in the center, top with crepe forming a sombrero shape.

  8. 8. Garnish with rosemary skewered shrimp. Serve.
