This is one of my favorite meals at a local mexican restaurant. They serve it with fresh peeled shrimp with crackers and extra hot sauce on the side, but I make it at home with just the avocados and no shrimp. Make sure that you use red onions (not white) and fresh cilantro - it makes all the difference!

1 cup v-8 juice
1/4 red onion
1/4 cup diced fresh cilantro
2 tablespoons ketchup
1 tablespoon hot sauce
1 raw avocado

measure out one cup of v-8 juice. add diced red onions, fresh cilantro, ketchup and avocado pieces. Add hot sauce to taste.
