Mexican Style Shrimp Ceviche adapted from Emeril Seafood Ceviche Recipe.

Recipe Ingredients for Mexican Shrimp Ceviche

8 oz Shrimps
2 lime yields Lime Juice
1 cup chopped Red Onion
1/4 cup Cilantro
1 large whole (3" dia) Tomatoes, Red, Ripe
1 pepper Peppers, Jalapeno
1 fruit without skin and seeds Avocados
1 dash Salt, Table
1 dash Pepper, Black
0.5 cup Ketchup
8 serving Hot Sauce

Recipe Directions for Mexican Shrimp Ceviche

  1. 1. Remove shell, vain, and tail from shimp and add to 4-6 Cups of boiling water. Boil for 5-8 Minutes until shrimp turn a dark pink/reddish color. Remove from Boiling water and add to ice water, set aside.

  2. 2. Chop up: red onion, cilantro, tomatoe, avocado, and jalapeno and pour into a bowl.

  3. 3. Once shrimp are sufficiently cold, chop shrimp up add to bowl with avocado, tomato, jalapeno, cilantro and onion.

  4. 4. Add Lime juice, ketchup, hot sauce, salt, and pepper and mix well. Refrigerate until serving time.
