Good way to use up a few stale tortilla chips. :S

Recipe Ingredients for Mexican Salad

2 cups lettuce, shredded
1 tomato, chopped (or 10 cherry tomatoes)
1/3 cup red onion, sliced
1/2 cup red pepper, sliced (also yellow if you have it)
1/2 cup corn, (1/2 an ear, boiled and grilled)
1/3 avocado, sliced
1 tortilla chips, crushed (I used 8 tostitos multigrain rounds)

Recipe Directions for Mexican Salad

Chop and layer. Serve with Creamy Mexican Dressing (1/2 cup plain yogurt, 2-3 T cilantro, 1 minced garlic clove, splash lemon juice)
