Great side dish to any Mexican meal

Recipe Ingredients for Mexican Rice

2 tbsp vegetable oil
1 cup rice
1/2 white onion
2 cloves garlic
4 ounces tomato sauce
2 cups chicken stock

Recipe Directions for Mexican Rice

heat oil and add rice. Fry rice, once rice is almost browned add onion and garlic. Fry for approx 1-2 more minutes then add tomato sauce. Add chicken stock and simmer for 20 minutes.
