homemade, delicious mild Mexican rice. great as a side or main dish.

Recipe Ingredients for Mexican Rice

1 cup rice
1/2 tsp minced garlic
4 tsp olive oil
1/4 cup chopped onion
1 tsp chicken stock powder
8 oz can tomato sauce
2 cups water
1/2 tsp salt
1/2 tsp black pepper

Recipe Directions for Mexican Rice

Heat up 1 tbsp. olive oil in a saucepan. Add rice. Keep on high heat, stirring frequently until rice becomes cream colored and starts to brown (about 3 minutes). Add garlic & onion. Stir for 2 more minutes. Add water, chicken stock and tomato sauce. Let it come to a boil. Put lid on pan and let simmer at medium heat for 20-25 minutes. Turn heat off and let stand 5-10 minutes. Fluff with a fork.
