Mexican Rice Recipe

Easy to make rice. Serve with tacos or enchiladas.

Recipe Ingredients for Mexican Rice

2 cups long grain white rice
2 tbsp canola oil
14 oz fat free chicken broth, low sodium
20 oz (RoTel) tomatoes, diced with green chilies
1/4 cup onions, diced
1/2 tsp salt

Recipe Directions for Mexican Rice

  1. Heat oil in medium skillet at medium high heat.

  2. Add rice and stir constantly until it is browned (light brown)

  3. While rice is browning, add remaining ingredients into 2-1/2 qt sauce pan and bring to a boil.

  4. Add rice carefully to sauce pan.

  5. Cover pan and simmer for 15 minutes.

  6. Turn off burner and uncover rice. Let stand 5 minutes.

  7. Stir & Serve
