Recipe Ingredients for Mexican Rice

1 green bell pepper, diced
1 small onion, diced
1 clove garlic, diced
1 tsp olive oil or butter
1 pinch salt and pepper
1 c rice
14 1/2 oz can tomatoes
2 1/2 c water
1 tsp chicken bouillon
1 tbsp tomato paste
1 tsp chili powder
1/2 tsp cumin

Recipe Directions for Mexican Rice

Saute pepper, onion, and garlic in oil until tender. Sprinkle with salt and pepper. Add rice and stir to coat with vegetable mixture. Stir in tomatoes, 1 1/2c chicken broth, tomato paste, and seasonings. Bring to a boil and reduce to a simmer. Stir occasionally so that rice does not stick to the bottom. Add more broth as necessary to cook rice until tender.
